Can the pawnshop sell my item if I'm late — and how much notice must they give?

Short answer
Not right away, and never quietly. Under Presidential Decree No. 114 §14 a pawnshop may sell your item only after you fail to redeem it within 90 days from maturity, and it must notify you of the sale on or before the end of that 90-day period, with the notice stating the date, hour and place of the sale. The sale itself must be a public auction run by a licensed auctioneer, and the pawnshop must publish a notice once in at least two daily newspapers in the city or municipality during the week before the sale — or, in remote areas, post notices in conspicuous public places (PD 114 §15). A private, unadvertised sale, or a sale before the 90 days lapse, violates the statute.

How much warning must I get before the auction?
PD 114 §14 requires the pawnshop to notify you of the sale on or before the termination of the 90-day redemption period, and the notice must particularly state the date, hour and place of the sale. Separately, PD 114 §15 requires a newspaper notice of the public auction in the week before it happens.
Can they just sell it privately to a buyer?
No. PD 114 §15 says no pawnshop may sell or dispose of a pawned article except at public auction under a licensed auctioneer, in its place of business or a public place in the same city or municipality. A private, off-book sale is unlawful.
What if they sold my item without notifying me?
That is a violation of PD 114 §§14–15. Gather your pawn ticket and any proof of the missing notice or premature sale, demand an accounting in writing, and file with the BSP Consumer Assistance Mechanism; PD 114 §18 also carries fines and possible imprisonment for violations.
